Organic Milk 74.5% Organic Sweetcream Butter - Ukraine

We are privileged to have access to multiple Ukranian butters and this brand does not disappoint! When they say 'sweetcream', they mean it!


This particular butter has, at 74.5%, the lowest butterfat content of any butter that we've yet encountered. In order to be considered butter, the established international standard indicates that the butterfat content should be at least 80%. This one, however, we found to have just as much structural integrity as the brand's 82.6%, if not more so, even at just 74.5% milkfat content!


In fact, the solidity of butter depends significantly on the cows' diet - the 'floppier' the butter, the more grass or actual plant matter they've likely been eating!

Butter Evaluation


In which we discuss Organic Milk's 74.5% Organic Sweetcream butter.


What a treat! Again, this stuff is just delightfully squidgy. Somehow we noted that this one was slightly stiffer than the butter with the higher fat content, but this could be written off as a temperature variation.

The texture of this butter is still very soft. Again, if you like your butter spreadable, this is the one for you. Even delicate toast breads shouldn't put up much of a fuss for this one if it's spread at room temperature.


As with its counterpart, it's very glossy and a slightly lighter yellow.


Its aroma is more buttery than milky with the very faintest suggestion of ferment. There are still sweet notes to the aroma which then lend themselves nicely to the actual butter.


On the palate, this one is light, clear and buttery with sweet notes. It's got a very nice mouthfeel that clings to the palate just enough to make you think you've been eating a lot of butter but without being claggy. Overall, this is a smooth, silky butter that's well balanced and indulgent!



Final Rundown


We know, because we've done experiments with it, that this little butter does exceptionally well in pastry! The flavour profile is perfect for enjoying in baked goods or just on its own but the extra moisture helps puff up the pastry just that little extra bit.


Absolutely lovely.


Colour: Light yellow, very high gloss.

Aroma: Clean butter with a slight hint of ferment.

Taste: Beautiful, sweet butter; clearing nicely to make room for more!
